Third Shift Amber Lager

Flavor Profile: Slightly sweet and malty with a clean, crisp finish and a hint of hop bitterness.

Food Pairing: Sweet and bitter notes enhance the flavor of hearty, spicy foods such as sausage, barbeque and chicken.

BEER OF THE MONTH RECIPES:

Cedar Plank Salmon - Paired With Third Shift
 Ingredients:
Third Shift Black Forest Chutney
¼ Stick butter, softened
2 Tbsp. olive oil
2 Tsp. salt
2 Tbsp. honey
¼ Cup fresh chopped dill
¼ Cup fresh chopped flat leaf parsley
Juice of 1 lemon
1 Fresh salmon filet, skin on
1 Cedar plank for grilling (soaked in water at least 1 hour)
Preparation:

Combine butter, oil, salt, honey, dill, parsley, and lemon in a bowl. Mix well and create a paste/rub. Use this mixture to liberally coat salmon, and add a lemon slice to the top, set aside until plank is ready.

Cooking with cedar planks requires a small amount of prep on the plank. Soak the plank in water for at least 1 hour. After soaking, put the plank on the grill and heat medium/high for 2 - 3 min; until it begins to smoke. Transfer the salmon to the smoked side of the plank and place back on grill. This adds a great smoky flavor to the fish. Cook on medium for about 20 min; or until the center of fish is firm to the touch.

Remove the salmon from the plank and place on a serving dish. Serve with your favorite side and grilled vegetable, such as asparagus and cous cous. Garnish with slice of lemon. Pair with a glass of Third Shift.
