They are your body's negative reaction to specific proteins in something you've eaten. Theses allergens,
in otherwise harmless food, can be mistaken by your immune system as dangerous and your body reacts by
defending itself. More than 12 million Americans have food allergies, with the highest incidence in young children.
Allergic reactions
An allergic reaction can involve the skin, gastrointestinal, respiratory, or cardiovascular systems, with symptoms
like hives, rash, swelling, itching, vomiting, cramps, diarrhea, and trouble breathing. Not everyone has the same
symptoms. One food can cause swelling in one person and a rash in another, for example.
WHAT TO DO IF YOU SUSPECT A FOOD ALLERGY
Symptoms of an allergic reaction can occur within minutes to up to 2 hours after consuming the allergen, and some may be delayed by up to three days.
