You don't have to slave over a hot stove for hours to have a meal that's nutritious and packed with flavor. With so many convenient frozen vegetables and meats, you can throw together a delicious stir-fry for the entire family in less time than it takes to order Chinese takeout.
• 1 pound shrimp, peeled and deveined
• 1/4 cup soy sauce
• 3 tablespoons brown sugar
• 1 teaspoon sesame oil
• 1 teaspoon Sriracha sauce (optional)
• 3 garlic cloves, minced
• 1/2 red bell pepper, sliced
• 1/2 green bell pepper, sliced
• 1/4 cup matchstick carrots
• 1 (12-ounce) package frozen broccoli florets
• 1 cup frozen sugar snap peas
• 3/4 cup vegetable broth
• 1 teaspoon cornstarch
• Green onions (optional, for garnish)
• Sliced limes (optional, for garnish)
1. Whisk together soy sauce, brown sugar, sesame oil, garlic and sriracha sauce in a small bowl. If you don't want your stir-fry to be spicy, omit the sriracha sauce. You can add more if you want it to be spicier, or add it to individual plates if you're feeding people with different preferences.
2. Heat a skillet to medium-high heat and add the shrimp, bell peppers and carrots. Pour the sauce over and cook until the shrimp turns pink. There's no need to thaw the shrimp before cooking. Toss the frozen shrimp into the pan and it will thaw and cook at the same time.
3. In a small bowl, whisk the vegetable broth and cornstarch together. Add to the pan along with the broccoli and sugar snap peas. Cook until the broccoli and sugar snap peas are tender and the sauce has thickened. Top it with green onions for garnish. Squeeze a bit of fresh lime juice on top to give it an extra splash of flavor.
4. Serve over rice or noodles, or alongside a fresh salad.
There's a lot of room for flexibility in this recipe. Stir-fries are great because you can toss in just about any vegetables that you have on hand. If you don't have the ingredients to make the sauce in your cabinet, you can always use a store-bought teriyaki, General Tso, sweet and sour or other stir-fry sauce in its place.
