Basic instructions. Dry beans may be soaked to reduce cooking time. If soaking is desired, use one of these methods. Overnight: 1. Place beans in large, deep pot. 2. Add enough water to cover peas by 2 inches. 3. Soak overnight or at least 6-8 hours. Quick soak: 1. Place beans in large, deep pot. 2. Add enough water to cover beans by 2 inches. 3. Boil. Boil 2 minutes. Remove from heat. 4. Cover and let stand 1 hour. Additional instructions: Dry beans and peas are natural foods and should be cleaned like any fresh vegetable. Sort any unwanted material and rinse well. For areas of the country with hard water, please add 1/8 teaspoon baking soda per pound of peas or use bottled water for cooking as hard water may lengthen the cooking time.
