Preparation Instructions: Defrost before cooking. To Defrost: Do not open the vacuum-pack. Defrost overnight in refrigerator (40 degrees F) or submerge entire vacuum package in cold water until thawed (approx. 40 minutes, or until product is completely defrosted). Remove from package by cutting with scissors around the protective wrap. Cook promptly after thawing. Barbecue: Preheat BBQ to med-high heat (approx. 425 degrees F/220 degrees C). Place the salmon and plank directly over the BBQ grill and close the cover for approximately 14-18 minutes, or until internal core temperature reaches 158 degrees F/70 degrees C. When cooking on the BBQ, have a spray bottle handy in case of flare-ups. Conventional Oven: Preheat oven to 425 degrees F/220 degrees C. Place the salmon and plank on a baking sheet, then place the baking sheet on the middle rack of the oven. Bake for 14-18 minutes or until internal core temperature reaches 145 degrees F/63 degrees C. Ovens and grills vary; cooking times may need to be adjusted. Do not overcook. Salmon is cooked when flesh becomes flakey. Salmon is perfectly cooked when it is still slightly pink in the center of the fillet. Remove immediately from cooking source. Product will continue to cook after you remove from the grill. Salmon will easily come off the plank when serving. Consuming raw or undercooked seafood may increase your chance of foodborne illness. Do not reuse cedar plank - it is intended for 1 use only. Keep frozen.
