quick and Easy Chicken with Rice

Chicken Rice and black beans mixed with corn and tomatoes makes a real quick meal.

Ingredients

Directions

  1. Fry Brown chicken thighs in pan, about 7 minutes per side remove and cut up into bite size pieces, put back in pan to stay warm
  2. Boil rice in another pan for about ten minutes
  3. add rice, black beans, corn and tomatoes in with chicken and stir till heated thoughout
  4. serve with optional sour cream, hot sauce and slice of avacado if desired
