Chicken Rice and black beans mixed with corn and tomatoes makes a real quick meal.
- Fry Brown chicken thighs in pan, about 7 minutes per side remove and cut up into bite size pieces, put back in pan to stay warm
- Boil rice in another pan for about ten minutes
- add rice, black beans, corn and tomatoes in with chicken and stir till heated thoughout
- serve with optional sour cream, hot sauce and slice of avacado if desired
