- To make the dressing, add the garlic, mustard, Parmesan, salt, oil and lemon juice to a food processor. Process until smooth.
- Bring a large pot of salted water to boil. Cook the pasta according to package directions. Run under cold water and drain well. Transfer to a serving bowl.
- Chop the romaine into 3/4-to-1-inch pieces and add to the serving bowl. Add the chopped chicken, croutons and Parmesan. Toss with the dressing and serve immediately.
