Shrimp and grits is a southern classic that proves that grits aren’t just for breakfast. And this easy version can be ready in just 15 quick minutes. So, when you need a good meal in no time, this dish is the perfect choice. With grits as the base and corn, tomatoes, roasted red peppers, shrimp and bacon on top, you have a complete meal with this single recipe.

- Heat the olive oil in a large skillet over medium heat. Add the shrimp and cook 1-2 minutes per side until opaque and cooked through. Season with the salt and pepper, if desired.
- Add the roasted red peppers, diced tomatoes and corn. Cook until warmed through. Remove from the heat.
- Add the contents of the instant cheddar grits packets to a medium bowl. Add boiling water and stir.
- Divide the grits into serving bowls. Top with the shrimp mixture and sprinkle with the bacon bits. Serve immediately.
