- Coat a large, heavy-bottomed pan with olive oil. Over medium heat, add sausage and brown well. Add onion, celery, and carrots and cook for 5 minutes.
- Add spices, and beans, stirring well to combine. Cook 3 minutes longer.
- Add chicken broth and water, and gradually bring soup to a boil. Once boiling, reduce heat to low and simmer, uncovered for 30 minutes.
- Adjust salt and pepper to taste. Serve immediately with optional garnishes.
