Get festive with these Jack O'Lantern bell peppers, stuffed with cheese, rice and seasoned ground beef for a fun and filling Halloween dinner.
- In a large saute pan, over medium heat, saute the onion and garlic in the butter and olive oil. Stir with a wooden spoon occasionally, so it does not burn. Add the beef and brown.
- Once the beef is brown, add the water, tomato paste, Worcestershire sauce, garlic, onion powder, salt and black pepper. Stir in the cooked rice.
- Cut the tops off of the bell peppers. Cut out the seeds and membranes and discard. Use a sharp paring knife and cut out Jackolantern faces. Scoop the prepared meat and rice mixture into the peppers. Place them in a shallow baking dish. Sprinkle with shredded cheese.
- Bake in a preheated 375 degree oven for 35-40 minutes. Or until the peppers are soft and the cheese is melted. Enjoy immediately.
