This Asian inspired dish packed full of flavor is so incredibly easy!


Select ingredients:


  1. Mix 1/2 cup coconut milk, garlic, 1 tsp. curry powder, 1-1/2 tsp. brown sugar, salt, and black pepper. Add steak and toss to coat. Set aside to marinate.
  2. Prepare peanut sauce by bringing 1 cup coconut milk, 1 tbsp. curry powder, peanut butter, chicken stock, and 1/4 cup brown sugar to a simmer in a saucepan over medium-high heat. Simmer for 5 minutes, stirring constantly, until smooth and thickened. Remove from heat and stir in lime juice and soy sauce.
  3. Heat skillet over medium-high heat, sauté beef until it is done. Add carrots, red peppers, and scallions and stir well. Mix in cooked spaghetti.
  4. Serve with a drizzle of peanut sauce and top with cilantro. Add sesame seeds if desired.
