All The Green Things Salad

Get your mix of greens with this all green salad featuring asparagus, peas, avocado, parsley and mint. Top it off with a citrusy lemon dressing!
Directions
- In a medium saucepan, bring water to a boil, then toss in the peas and asparagus and cook for 3 minutes. Drain.
- On a large platter, arrange the spinach leaves, then top with the peas and asparagus.
- Arrange the avocado slices on top. Add the parsley.
- In a small bowl, whisk together the lemon juice, the olive oil, the mustard, the sugar, and the salt and pepper. Drizzle the dressing over the greens.
