A Cajun staple particularly popular down Louisiana, this dish can be made with many variations depending on the cooks palate. You can change things up by making it less spicy, adding diced chicken or making it with brown rice.

  1. In a Dutch oven, sauté onion, pepper and garlic in oil until tender.
  2. Add sausage, tomatoes, water and rice; bring to a boil.
  3. Reduce heat; cover and simmer until rice is tender, about 20 minutes.
  4. Add shrimp; simmer, covered, until shrimp are cooked, 8-10 minutes. Serve.
