Layers of moist, flavorful apple cake separated by fluffy icing and topped with caramel and walnuts.
In a large bowl, blend together applesauce, oil, sugar, brown sugar and eggs. In small bowl, combine flour, cinnamon, baking soda, salt and nutmeg. Slowly blend dry ingredients with sugar mixture. Fold in apples, walnuts and vanilla.
Spray 2 or 3 cake pans with cooking spray. Divide batter evenly into pans. Bake at 325° for 30-40 minutes or until a toothpick comes out clean. Cool in pan 10 minutes. Remove and cool completely on a wire rack.
Melt and stir brown sugar, half-and-half, butter and salt in a small, heavy saucepan over medium-low heat. When sugar is dissolved, transfer to a small bowl. Cool until room temperature. Whisk in confectioners' sugar until smooth.
When cake is completely cool, add frosting between layers and on sides of cake. Drizzle caramel over cake. Garnish with walnuts or sliced apples, if desired.
Slice and serve.
