Bring some sweetness to your stuffing with apples and cranberries. Pair with fresh rosemary to really bring out the flavor of this holiday or Christmas stuffing!
- Preheat oven to 350º. In a skillet, heat oil over medium heat, then add onion, celery, a pinch of salt and a sprig of rosemary. Cook, stirring frequently, until vegetables are tender. Then toss in apple and sage and sauté for another 5 minutes or until apples are crisp-tender.
- Place the bread cubes in a large bowl (day-old or stale bread is best, but you can also dry out fresh bread in an oven set to low) and pour in vegetable broth. Depending on the size of your baguette, slightly more or less liquid may be needed. Pour in enough liquid so that bread is soggy but not so much that there is liquid in the bottom of the bowl. Add in veggie-apple mixture, making sure to remove rosemary sprig, and toss to combine.
- Transfer to a baking dish and bake uncovered for 15-20 minutes or until the bread on the top starts to brown. Serve warm.
