The flavors of the seasonal apples and cinnamon are at the heart of this Thanksgiving beverage.
To make the simple syrup: In a medium saucepan, place the sugar, water, apple pie spice, cinnamon, and the cinnamon stick. Heat, stirring frequently, until the sugar is dissolved and the consistency becomes syrupy (takes about 10 minutes).
For each Apple Pie Moscow Mule: In an extra-large mug (copper mugs are one choice), place 4 tablespoons of vodka.
Add 3 tablespoons of the simple syrup.
Add 1 cup of apple cider.
And a bunch of crushed ice.
Top with 1/3 cup of ginger beer.
Add lemon juice to the apple wedges to keep them from browning.
Garnish each drink with apple wedges and cinnamon sticks.
