Apricot Breakfast Scones

These scones are best served straight from the oven. They can be reheated at 350 for 5 minutes. You can serve them with butter or jam, but they stand on their own as well.



  1. Preheat oven to 425.
  2. Sift flour, baking powder, sugar and salt into a large bowl.
  3. Add chopped apricots and whipping cream
  4. Gently mix until combined.
  5. Spread a piece of wax paper on the counter. Lightly flour it and put some flour in a plate so you can dip your hands to keep them from sticking as you shape the dough
  6. Shape dough into a circle, 1/2 inch thick.
  7. Cut into 8ths or 12ths.
  8. Use a spatula and transfer to an ungreased cookie sheet. Brush top of scones with cream, and sprinkle with sugar. Bake for 15 minutes, until golden brown. Bon Appétit!
