Apricot Marinade

This fruity, herb-infused marinade is the perfect accompaniment for grilled salmon or other entrees.

Directions

  1. In a bowl, combine apple juice, honey, vegetable oil, vinegar, orange zest, black pepper, basil, and parsley. Add the apricots and mix. Cover the bowl and let it marinate for at least a half-hour. (Place in the refrigerator if you’re going to let it sit for longer than that.)
  2. Be sure to make the marinade before you grill the salmon. As soon as the salmon is ready, top with the apricot marinade and serve.
