- In a bowl, combine apple juice, honey, vegetable oil, vinegar, orange zest, black pepper, basil, and parsley. Add the apricots and mix. Cover the bowl and let it marinate for at least a half-hour. (Place in the refrigerator if you're going to let it sit for longer than that.)
- Be sure to make the marinade before you grill the salmon. As soon as the salmon is ready, top with the apricot marinade and serve.
