- Adjust oven rack to middle position and preheat to 400 degrees. Roll out pastry and place on a lined baking sheet.
- Spread asparagus over puff, then mix together sour cream, egg yolks, and garlic and season to taste with salt and pepper. Pour sour cream mixture evenly over asparagus then sprinkle with thyme leaves. Bake until pastry is golden and custard has set, about 35 minutes. Allow to cool before slicing.
