Avocado Baked Eggs

This inventive breakfast dish is packed with protein and flavor! Halved avocados double as egg cups here, for a rich and delicious breakfast that's perfect alongside crunchy bread.

  1. Preheat oven to 425.
  2. Slice avocados in half lengthwise, and discard pits and peel. Using a spoon, carefully scoop out avocado meat until there is a 2-3" wide hollow in the center. Place hollow side up in a greased casserole dish.
  3. Crack an egg into the center of each hollow. Sprinkle with salt, pepper, and bacon bits.
  4. Bake for 15 minutes, or until bacon is crisp and egg has set. Serve immediately.
