A delicious spin on classic carrot cake, made with baby food (don't let this scare you away!!)


Select ingredients:


  1. Preheat oven to 350 degrees. Place cupcake wrappers in pan. In one bowl, mix together the flour, baking soda, salt, and cinnamon.
  2. In another bowl, combine eggs, sugar, and oil. Beat until smooth. Beat in flour mixture alternating with the baby food (each time you put in the flour mixture, add in a jar of baby food). Pour batter into the cupcake pan.
  3. Bake for 12 minutes, or until a toothpick inserted into the center of the cupcakes comes out clean. Allow the cupcakes to cool.
  4. Ice cupcakes with cream cheese icing and have fun decorating! Makes 40 mini cupcakes. You can also use this recipe to make a cake or larger cupcakes. Adjust cook time accordingly (about 16 minutes for cupcakes, 20-25 minutes for cake, depending on size)
