Baby Food Mini Cupcakes

A delicious spin on classic carrot cake, made with baby food (don't let this scare you away!!)

- Preheat oven to 350 degrees. Place cupcake wrappers in pan. In one bowl, mix together the flour, baking soda, salt, and cinnamon.
- In another bowl, combine eggs, sugar, and oil. Beat until smooth. Beat in flour mixture alternating with the baby food (each time you put in the flour mixture, add in a jar of baby food). Pour batter into the cupcake pan.
- Bake for 12 minutes, or until a toothpick inserted into the center of the cupcakes comes out clean. Allow the cupcakes to cool.
- Ice cupcakes with cream cheese icing and have fun decorating! Makes 40 mini cupcakes. You can also use this recipe to make a cake or larger cupcakes. Adjust cook time accordingly (about 16 minutes for cupcakes, 20-25 minutes for cake, depending on size)
