It's the breakfast sandwich we crave, only cheaper, healthier, and it doesn't require waking up early.
- Cook the Turkey Bacon in a skillet on Medium covered, stirring when needed, until crispy. Once it has finished cooking, set it aside on a paper towel on a plate.
- Split the English Muffins in half and put in the toaster as you begin to scramble the eggs.
- Scramble the eggs either in the same skillet as before wiped out, or a separate one slightly oiled or buttered to prevent sticking. Add salt and pepper and mix at the last second before taking them from the pan.
- Add a small cut of Mozzarella off the block to the top of each portion of hot eggs and immediately cover with bacon and the top of the English Muffin to make sure it melts.
