Treat yourself to a bite-size helping of mac and cheese made with a blend of cheese, bacon and fresh chives.
- Preheat the oven to 400°F. Spray 34 mini muffin cups with cooking spray. Cook the macaroni in a saucepan following the package directions. Drain and return to the saucepan.
- Meanwhile, melt butter in 1-quart saucepan over medium-low heat. Mix in flour and salt. Cook and stir until mixture is smooth and bubbly. Slowly add milk, stirring constantly, until the mixture boils and thickens. Add in 3/4 cup of the Cheddar cheese until melted. Next, mix in Parmesan cheese, blue cheese and bacon until combined. Pour the mixture over macaroni, stirring until well blended.
- Spoon the mixture into the prepared mini muffin cups.. Top with bread crumbs. Sprinkle evenly with remaining 3/4 cup Cheddar cheese.
- Bake for 20 to 25 minutes or until golden brown. Allow it to stand 10 minutes. Sprinkle with chives. Remove from pans and serve.
