- Preheat oven to 350. Season pork with allspice, a sprinkle of pepper, and place on rimmed baking sheet.
- In a small mixing bowl, combine cherries, parsley and mustard. Mix well and spread evenly over the pork. Lay bacon pieces crosswise over the pork and tuck overhanging ends underneath. Roast 45 minutes.
- In another small bowl, combine jelly and vinegar. Remove pork from oven and brush mixture over the bacon pieces. Return to oven and roast until meat thermometer reads 150 degrees Fahrenheit. This should take about 10-15 minutes. Let rest 10 minutes before slicing and serving.
