Bahamian Mac & Cheese

A Caribbean twist on an American favorite. Mac and Cheese with a kick!


Select ingredients:


  1. Preheat oven to 350 degrees.
  2. Boil pasta in 4-6 quarts of water with salt and butter for about 15 minutes.
  3. Finely chop green pepper and onion.
  4. Once pasta is boiled, drain and return to the pot.
  5. On a low heat, add chopped green pepper, onion, eggs butter, and milk to the pasta. Then stir.
  6. Add 4 1/2 cups of shredded sharp cheddar, and stir until melted.
  7. Add in salt, black pepper, crushed red pepper flakes, garlic powder and Italian Seasoning. Then stir.
  8. Thoroughly grease 9x13 (3qt) oven safe glass dish with butter.
  9. Pour pasta mixture into the dish evenly.
  10. Cover pasta mixture with remaining 2 cups of shredded Sharp Cheddar cheese.
  11. Cover layer of Sharp Cheddar cheese with 3/4 cup of shredded Parmesan.
  12. Place uncovered in oven for approximately 30 minutes or until the top starts to crisp.
