- Preheat oven to 400º and line a baking sheet with parchment paper. Mix together cheddar and Parmesan in a bowl, then scoop about ½ tablespoon onto the baking tray to form small piles of cheese at least one inch apart. Pat down the piles slightly, then sprinkle with your spice of choice.
- Transfer to the oven and bake for about 10 minutes, keeping a close eye on the crisps to ensure they don’t burn. They are ready when the edges brown.
- Remove from the oven and let cool before serving. Don’t worry if they still seem a bit soft; they will harden as they cool.
- Top with green onion if desired and serve immediately or store in an air-tight container.
