Select ingredients:


  1. Preheat oven to 400º and line a baking sheet with parchment paper. Mix together cheddar and Parmesan in a bowl, then scoop about ½ tablespoon onto the baking tray to form small piles of cheese at least one inch apart. Pat down the piles slightly, then sprinkle with your spice of choice.
  2. Transfer to the oven and bake for about 10 minutes, keeping a close eye on the crisps to ensure they don’t burn. They are ready when the edges brown.
  3. Remove from the oven and let cool before serving. Don’t worry if they still seem a bit soft; they will harden as they cool.
  4. Top with green onion if desired and serve immediately or store in an air-tight container.
