Baked Ham & Egg Cups

If you have a few ham slices leftover, but not enough for a full sandwich, try this simple, super delicious, breakfast option that only calls for a single egg, sliced ham and a sprinkle of spice and herbs. You can add to it with any number of common pantry items, from hot sauce to ketchup, cheese to veggies.

- Butter or lightly oil the bottom of a ramekin or muffin tin. Line it with thinly sliced ham. Place the ham so the slices completely cover the bottom and fall over the rim on the top.
- Break one egg inside of the ham cup. Make sure to leave the yolk intact. Sprinkle it with salt and pepper to taste.
- Preheat the oven to 325-degrees and bake the egg and ham for 12 to 15 minutes, depending on your preference for runny yolk. While it's baking, slice some fresh red chili and basil.
- Garnish it with slices of chili pepper and basil.
