Ingredients
Directions
- Preheat the oven to 375 degrees.
- Line a baking sheet with foil or parchment paper.
- Cut the peppers in half and scoop out the seeds, membranes and other insides. If the peppers don't lay flat on a baking sheet, slice a little off of the bottom.
- In a bowl, food processor or blender, crumble tortilla chips until fine (they should resemble bread crumbs.) Transfer to a shallow bowl and set aside.
- Combine cream cheese, shredded cheese and garlic powder in a small bowl. Set aside.
- In a separate bowl, whisk together egg and egg white. Set aside.
- Stuff each jalapeno half with cream cheese mixture. Be sure not to over stuff.
- Dip stuffed pepper half into egg mixture, then roll in chip mixture, and place on baking sheet. Repeat for each pepper.
- Bake for 20 minutes or until cheese is bubbly and hot.
