Baked Mexican Chicken

An easy-to-make, quick-to-bake chicken dish that's light, zesty and delicious.

Directions

  1. In a small mixing bowl, combine spices. Sprinkle each chicken breast with spice mixture, coating all sides.
  2. In a baking dish, pour olive oil to coat bottom of pan. Place breasts side by side in pan. Pour salsa over chicken.
  3. Bake for 20 minutes at 400 degrees. Remove from oven and cover chicken with cheese.
  4. Return to oven and broil for 3 minutes, or until cheese begins to brown. Serve immediately.
