Baked Mexican Manicotti

Restaurant style Mexican cuisine that's easy to prepare and inexpensive, guaranteed to impress your friends and family. My mother came to visit and wanted this tasty southwestern recipe.


Select ingredients:


  1. Combine Refried beans, Ground Beef, Chili Powder, Oregano (drained Black Beans are optional). Mix ingredients and fill (dry uncooked) Manicotti shells with a spoon. Arrange stuffed manicotti shells in a greased 9x13 baking dish. Combine water and salsa, pour over shells, cover baking dish and refrigerate several hours or overnight.
  2. Remove baking dish from refrigerator, allow 30 minutes at room temperature before baking. Cover dish with foil and bake at 325 for 1-hour. Remove foil, spoon sour cream over the top. Sprinkle shredded cheese on top (top with black olive slices and sliced green onions if desired). Bake 5-10 minutes longer to melt cheese.
  3. Allow to cool uncovered for 10 minutes to set up and serve.
