- Preheat oven to 350 degrees. Then heat oil over a 9 to 10-inch cast iron skillet or other oven-proof pan. Add onions and peppers and sauté until tender, about 5 minutes.
- In a bowl, whisk together eggs, herbs, mozzarella, salt and pepper then pour into the well-greased pan. Stir contents to ensure the peppers and onions are evenly distributed.
- Cook over medium heat until the egg mixture starts to solidify and pull away from the edges of the pan, about 7-10 minutes depending on your stove. Then transfer the skillet to the middle rack in your oven and cook for an additional 8-12 minutes or until the eggs in the center are set.
- Top with additional herbs if desired and serve hot.
