This pepper frittata features fresh herbs like chives, parsley, oregano, and basil. Make this recipe to take your breakfast to the next level!


Select ingredients:


  1. Preheat oven to 350 degrees. Then heat oil over a 9 to 10-inch cast iron skillet or other oven-proof pan. Add onions and peppers and sauté until tender, about 5 minutes.
  2. In a bowl, whisk together eggs, herbs, mozzarella, salt and pepper then pour into the well-greased pan. Stir contents to ensure the peppers and onions are evenly distributed.
  3. Cook over medium heat until the egg mixture starts to solidify and pull away from the edges of the pan, about 7-10 minutes depending on your stove. Then transfer the skillet to the middle rack in your oven and cook for an additional 8-12 minutes or until the eggs in the center are set.
  4. Top with additional herbs if desired and serve hot.
