A light, healthy dinner that is gluten-free and great for a meatless dinner!
- Preheat oven to 350 degrees. Cover a baking sheet in aluminum foil.
- Place olive oil in a small bowl. In a separate bowl place the Parmesan cheese.
- Dip each tilapia filet in the olive oil and then the Parmesan cheese. Repeat until each filet is covered and place on the baking sheet.
- Place in the oven and bake for 10 minutes or so, until the tilapia begins to flake.
