- Preheat the oven to 425 degrees F. Line a half sheet pan with aluminum foil and set aside.
- Stir bread crumbs, cornflakes crumbs, and Parmesan cheese in a small bowl. Whisk together the egg and buttermilk in another small bowl.
- Work in small batches to dip the zucchini pieces into the buttermilk/egg mixture and then coat with bread crumbs. Place the coated zucchini pieces on the half sheet pan as you go along.
- Bake zucchini fries in the preheated oven for about 20-25 minutes, or until golden brown. Turn only once during the cooking process. Enjoy immediately and serve with warm marinara sauce or ranch dressing.
