  1. Preheat the oven to 425 degrees F. Line a half sheet pan with aluminum foil and set aside.
  2. Stir bread crumbs, cornflakes crumbs, and Parmesan cheese in a small bowl. Whisk together the egg and buttermilk in another small bowl.
  3. Work in small batches to dip the zucchini pieces into the buttermilk/egg mixture and then coat with bread crumbs. Place the coated zucchini pieces on the half sheet pan as you go along.
  4. Bake zucchini fries in the preheated oven for about 20-25 minutes, or until golden brown. Turn only once during the cooking process. Enjoy immediately and serve with warm marinara sauce or ranch dressing.
