Banana and Almond Butter Pancakes

These fluffy pancakes are still a delicious breakfast treat, but oat flour and banana and applesauce instead of oil and egg are easy swaps to make them a little easier to enjoy guilt-free.

- Combine oat flour (or process rolled oats in a food processor or blender until ground into flour), baking powder, salt and sugar in a bowl and whisk together.
- In a separate bowl, combine the milk, banana, applesauce and vanilla and stir.
- Combine the wet and dry ingredients and mix thoroughly.
- Scoop 1/3 cup of the mixture into a non-stick pan over medium heat, flipping each pancake when golden brown on the underside.
- Top each serving with 1-2 tablespoons of almond butter, slices of fresh banana, and a drizzle of maple syrup and serve immediately.
