These delightful muffins are packed with bananas and fall spices. Reminiscent of flavorful chai tea, they might become your new favorite fall treat.
- In a large bowl, add the eggs, bananas, brown sugar, melted butter, vanilla, salt, baking soda, cinnamon, nutmeg, cloves and ginger and whisk or mix to combine.
- Add the oats and flour and stir with a spatula until the batter just comes together.
- Transfer the batter to a greased muffin pan, or mini muffin pan, if you prefer, and bake at 350 degrees for 17-20 minutes (12-14 for mini muffins). When a toothpick inserted into the middle of the muffins comes out clean, remove from oven, let cool, and enjoy immediately or refrigerate.
