A Southern twist on a classic breakfast skillet. You can serve this for breakfast, brunch, lunch or dinner!
- In an dutch oven, cook onion in olive oil until tender. Add tomatoes and spinach and continue cooking for about 3 minutes until well mixed.
- Sprinkle pork over top and mix well over heat for about 2-3 minutes. Once mixed, sprinkle cheese, salt and pepper over the top.
- Crack eggs on top of the mixture in the pan. Do not break the yolks. Put the entire dish into the oven. Bake at 400 degrees for 5 minutes, or until eggs are done to taste. Serve immediately.
