A Southern twist on a classic breakfast skillet. You can serve this for breakfast, brunch, lunch or dinner!

  1. In an dutch oven, cook onion in olive oil until tender. Add tomatoes and spinach and continue cooking for about 3 minutes until well mixed.
  2. Sprinkle pork over top and mix well over heat for about 2-3 minutes. Once mixed, sprinkle cheese, salt and pepper over the top.
  3. Crack eggs on top of the mixture in the pan. Do no™t break the yolks. Put the entire dish into the oven. Bake at 400 degrees for 5 minutes, or until eggs are done to taste. Serve immediately.
