Beef and Bean Burritos

These burritos are super easy to make and pack a powerful punch of flavors and spice. You can prep them ahead of time and place in the freezer for quick meals.


Select ingredients:


  1. Brown the beef, pork and onion in a 12-inch skillet, over medium to high heat. Add the can of diced tomatoes and green chilies and one jar of the enchilada sauce.
  2. Heat the refried beans either in the microwave or in a saucepan on the stove. Set aside.
  3. Assemble the burritos. Spread refried beans on each tortilla and sprinkle with shredded cheese. Spoon a good amount of the meat mixture into the center of the tortilla. Fold over the ends and roll up the burritos.
  4. Spoon a little enchilada sauce in the bottom of a baking dish. Place burritos, seam side down into the baking dish. Place them close together. Drizzle with enchilada sauce. After you place all of the burritos into the pan, sprinkle the top generously with shredded cheese.
  5. Bake in a preheated 450 degree F oven for about 20 minutes. Broil on high for about 3-4 minutes to brown the cheese nicely.
  6. Serve with Spanish rice, refried beans, sour cream, chopped tomatoes, shredded lettuce and guacamole.
