This spicy Tex-Mex inspired dish is packed full of veggies and protein. It's easy to make in less than 30 minutes, for under $10, is a 3-star Guiding Stars certified recipe, and only requires one pot, so cooking and cleanup will both be a breeze.

  1. In a large pot, heat the oil over medium heat. Add the onion and bell pepper and cook for about 5 minutes or until the vegetables start to soften. Add the jalapeno, garlic, and corn and cook for another 2 minutes.
  2. Add the vegetable broth and quinoa and bring to a boil. Then reduce heat to low and cook, covered, for 10-15 minutes or until the quinoa has absorbed all the liquid.
  3. Remove the lid, then add the black beans, chili powder, cumin, paprika, salt, pepper, and cilantro and stir until spices are integrated.
  4. Remove from heat, top with additional cilantro if desired, and serve warm.
