Black Bean and Corn Quinoa

This spicy Tex-Mex inspired dish is packed full of veggies and protein. It's easy to make in less than 30 minutes, for under $10, is a 3-star Guiding Stars certified recipe, and only requires one pot, so cooking and cleanup will both be a breeze.

- In a large pot, heat the oil over medium heat. Add the onion and bell pepper and cook for about 5 minutes or until the vegetables start to soften. Add the jalapeno, garlic, and corn and cook for another 2 minutes.
- Add the vegetable broth and quinoa and bring to a boil. Then reduce heat to low and cook, covered, for 10-15 minutes or until the quinoa has absorbed all the liquid.
- Remove the lid, then add the black beans, chili powder, cumin, paprika, salt, pepper, and cilantro and stir until spices are integrated.
- Remove from heat, top with additional cilantro if desired, and serve warm.
