This black bean pizza is loaded with reduced-fat cheddar cheese, scallions, corn, tomatoes and black beans. Guiding Stars gives this a 2 star rating, making it a healthy pizza option the whole family can enjoy.


Select ingredients:


  1. Position an empty baking sheet on the middle rack of the oven and preheat to 450 degrees F.
  2. Mix together the black beans, corn, tomatoes, scallions, cumin, chili powder, avocado, salt and black pepper in a medium bowl and set aside.
  3. Lightly flour a flat surface to make your pizza on. Form the pizza dough into a 13-inch circle. Carefully place the dough on the warmed baking sheet and shape the edges slightly to make a lip at the edge of the crust.
  4. Add the black bean mixture on top of the dough, top with the cheese and bake 20 minutes or until crust is golden brown. Divide into 8 slices and serve.
