Black Beans, Avocado and Egg Tacos

These tacos are fast to put together, and can make a great brunch with friends or even a light dinner.

In a small skillet over medium high heat, heat the oil until shimmering then add scallions. When fragrant (about 1 minute) add the black beans, chili powder, red pepper flakes, and lime juice. Cook until the liquid has evaporated (about 4 minutes) then season to taste with salt and pepper and keep warm until ready to assemble.

In a small skillet over medium low heat melt the butter. When the butter has melted add the beaten eggs and cook stirring often until just beginning to set (about 5 minutes). Add half the chopped cilantro (reserving the rest for garnishing the tacos) then season to taste with salt and pepper.
- Wrap the tortillas in a most paper towel and microwave for 30 seconds. Check and see if the tortillas are warm and pliable, and repeat microwaving until they are soft heated through.

Divide the black beans between the tortillas, followed by chopped avocado, followed by egg then garnish with chopped cilantro. Serve immediately with hot sauce passed alongside.
