Enjoy a blend of blackberry, fresh mint leaves, champagne and orange juice in this refreshing blackberry mint mimosa.

- To make simple syrup; add equal parts of water and sugar to a medium saucepan and cook over medium heat to dissolve sugar. Let cool completely.

In a large saucepan, add enough water to just cover the bottom of the pan. Add the berries, put the lid on and simmer over medium to low heat until the berries are softened. About 10 minutes.

Press the berries through a fine mesh strainer with a large spoon. Discard the seeds and pulp. Let the juices cool completely.

For one serving: Add 1 tablespoon turbinado sugar, 1/4 cup blackberry juice, and a few mint leaves to a cocktail shaker and muddle to release mint oils. Add 2-3 tablespoons simple syrup, and 1/4 cup orange juice and shake well.
- Pour into a champagne glass or tall narrow glass and top with champagne. Garnish with fresh berries and a sprig of fresh mint. Repeat with the remaining blackberry juice.
