Your next pasta dinner recipe is served! With bacon, two flavorful cheeses, spinach and a creamy sauce, this dish will quickly become a favorite at the dinner table. And since it only takes 20 minutes total to prep and cook, it’ll be one of your go-to’s after a busy day. However, if you would like to make it a little heartier, add some shredded rotisserie chicken. Then, if you have leftovers, add a little olive oil and half-and-half before reheating.
- Bring a large pot of salted water to a boil over high heat. Cook pasta according to package directions. Drain and set aside.
- In a deep sauté pan, melt butter over medium heat. Add garlic and onions and cook until fragrant, about 5 minutes. Pour in half-and-half and whisk to combine. Once cream is steaming, add cheeses and continue whisking until mostly smooth (blue cheese will not fully melt). Taste first (cheese already tends to be extra salty) and season with salt and pepper, if necessary.
- Add spinach to cheese mixture and stir gently until fully wilted. Add half the crumbled bacon. Turn off heat and gently fold in drained pasta, fully coating with cheese sauce.
- Garnish with leftover bacon on top and serve immediately.
