Bellinis are usually reserved for peaches, but this blueberry version is a perfect change. Enjoy this mocktail version.
- Add sugar, water and blueberries into a small saucepan. Bring to a simmer and allow to cook for about 10 minutes or until sugar is dissolved. Let cool.
- Transfer cooled mixture to a blender and puree until smooth. Strain with a sieve or cheesecloth.
- Pour 2 ounces of blueberry puree into a champagne flute or cocktail glass. Add 3 ounces of juice or prosecco. Gently stir to mix.
