- In a pot with enough water to cover the carrots, boil carrots until tender, 5-10 minutes. When carrots are soft enough to stick a fork into, strain, return carrots to pot, and reduce heat to medium high.
- Add bourbon, maple syrup and salt, stirring frequently until most of the liquid is gone, 10-15 minutes. Pour carrots and remaining liquid into a bowl and serve immediately.
