Twist up your favorite broccoli cheddar soup with the addition of lean protein to make it a complete, filling meal!
In a frying pan, saute the onions and garlic over medium-heat until the onions become more fragrant.
Reduce the heat a touch and add the butter and flour to the onion and garlic and simmer until the mixture becomes brown.
Transfer the mixture from the frying pan into a deep, thick-bottomed soup pot and add the chicken broth. Stir frequently to reduce lumps in the mixture.
Add in the garlic powder, broccoli, chicken, salt, cayenne pepper, black pepper to the pot and allow to simmer for 40 minutes. Stir frequently to prevent sticking to the bottom of the pan.
Right before serving, add in the cheese and milk and stir well.
- Add a sprinkle of cheese or bacon pieces to the top if desired.
