Broccoli & Cheese Dip with Homemade Chips

What a lovely (and healthy!) switch from your everyday chips 'n dip! This cheese dip is super easy to make!

Place the cream cheese, the pasteurized prepared cheese, and the onion in the slow cooker.

Add the broccoli, the salsa, and half of the bacon. Cook on High for one hour, stirring occasionally.

Prior to serving, prepare your potato dippers. Line a baking sheet with aluminum foil and coat it lightly with oil. Place the potatoes (not overlapping) on the baking sheet and lightly oil the potatoes.
- Apply a small amount of salt, pepper, and smoked paprika to each potato. Pop them in a 450-degree oven and bake for about 20 to 25 minutes, until they are browning and crispy. Watch them closely—they like to stick and they like to burn.
- Remove from the oven and allow to cool slightly.
- Top the broccoli dip with the remaining bacon and serve the potatoes with the broccoli dip.
