- In a large bowl, combine the ground chicken, the egg, the celery, the carrot, the breadcrumbs, the parsley, the garlic powder, the salt, the pepper, and the hot sauce. Thoroughly mix and shape them into meatballs (approximately 18 of them). Place on a lined baking sheet and bake in a 400-degree oven for 20 minutes, until thoroughly cooked.
- To assemble: place cheddar cheese on the bottom of each roll, add three meatballs, and top with mozzarella cheese, and the top of the bun.
- Return to the oven for 3 to 4 minutes until the cheese is melted.
- Serve with ranch dressing and additional hot sauce, if desired.
