A big bowl of chili is the perfect meal for a chilly day, especially when it is filled with rich flavors of butternut squash, beans, tomatoes and peppers, topped off with sour cream and green onions.
- Add olive oil to large pot set on medium heat. Add onions and garlic and cook for 3-5 minutes.
- Add in all other ingredients and stir well.
- Cover and simmer on low for 30-45 minutes. Uncover and continue to simmer until some of the liquid is reduced.
- Serve with sour cream and green onions.
