- Preheat oven to 350F. Add room temperature butter, lime juice, sugar and lime zest to a bowl. Mix using an electric mixer for 1-2 minutes.
- Slowly add in flour, salt and almonds until well combined.
- Lay dough out on plastic wrap and form a log. Wrap in plastic wrap and refrigerate. After 30 minutes, unwrap and slice off cookies and place on baking sheet. Bake for 12-15 minutes.
