This creamy, cheesy Mexican comfort food dish is a great way to turn leftover chicken into something special. Start with Prego Alfredo for the creamy base then add Pace Salsa Verde for authentic flavor. Chicken, peppers and onion are rolled up in corn tortillas then smothered with the sauce and cheese. A simple and delicious one-dish dinner that’s sure to become a family favorite.
While oven is preheating to 375, over medium heat, take a medium skillet and heat the oil. Adding pepper and onion, cook for 5 minutes or until tender.
In a large bowl, stir ¼ cup alfredo sauce, chicken, and ¼ cup cheese along with the salsa verde. Incorporate pepper and onion mixture until mixed well.
In a shallow 2-quart baking dish, evenly spread ¼ cup of Alfredo sauce along the bottom.
Stuff around 1/3 cup of the chicken mixture in the middle of each tortilla.
After rolling the tortillas in the filling, place seam side down in the baking dish.
Pour the rest of the Alfredo sauce over the tortillas and garnish with extra cheese. Cover dish.
Cook in oven for 35 minutes or until inside is hot.
Top with remaining cilantro and salsa verde as needed.
